No Nut Pesto

Ingredients

20g Basil Leaves
3 tbsp Olive Oil
3
Garlic Cloves (crushed)
20g
Pumpkin Seeds
10g
Grated Parmesan
1 Avocado

 

Directions

  1. Put the pumpkin seeds into a small blender (I use the Nutri Ninja) and blend until they are in much smaller pieces.

  2. Add the basil, olive oil, crushed garlic, avocado and blend again until smooth.

  3. Grate in the parmesan and stir.


Notes

Great stirred into quinoa pasta (see my ‘gluten free swaps’ download for my favourite brand). Also good used as a marinade for chickpeas. Also great for childrens lunchboxes.
