My Signature Granola

Ingredients

3 tbsp Coconut Oil
3 tbsp Maple Syrup (or Honey)
2 tsp
Cinnamon
2 cups
Oats
2 cups
Buckwheat
1 cup Sunflower seeds
1 cup Pumpkin seeds
1/2 cup Goji Berries
1/2 cup Raisins
1/2 cup Toasted pecans and walnuts

 

Directions

  1. Preheat oven to 170C fan (190c, 375F, Gas Mark 5)

  2. Melt coconut oil in the oven

  3. Mix in the maple syrup and cinnamon, then stir in oats and buckwheat until they are fully coated.

  4. Cook for 45 minutes, stirring periodically.

  5. When cool, add sunflower and pumpkin seeds, goji berries, raisins and toasted pecans and walnuts .


Notes

This is a nice recipe naturally free of gluten - just swap our regular oats for gluten free oats.

Buckwheat groats are available in health food stores or online (seven hills do reasonably priced large bags) but if you’d prefer to leave these out, just double the quantity of oats.
